HOME - the galley- conch salad

 
 

I love street food. I love bright coloured carts with local specialties, pots of oil, grills, wierd fruits and stuff I don't recognize. The best conch salad carts are right beside the water. The conch are kept in the water and the vendor pulls them as needed for the salad. And as a bonus, with this much citrus juice you'll never get scurvy!

2. raw conch
1/2 med. onion
1 green pepper
1 tomato
Juice of 1 lime (or 2 if they're not juicy)
Juice of 1 sour orange
1 tsp. salt
1/4 tsp. black pepper
Smidgen of scotch bonnet pepper or as much as you can take

Chop conch and onions very fine. Cut tomatoes and green pepper into 1/2 inch cubes. Mix well with the salt, pepper and hot pepper. Squeeze the sour orange and the lime over. Serve.
