Bacon, Tomato & Avocado Wraps

In the six seasons I’ve been cruising things have changed in the galley. Not only have I become way better at cooking in a bouncing shoebox, the products available are so much better.

This years find was ready cooked bacon. No more mess! No more spoilage! Protein!

What’s the big deal you ask? Well, ready cooked bacon comes in a nice small vacuum sealed package that will last for six months without refrigeration! For those of us cruising without refrigeration this is a godsend. Even if you have refrigeration is you’re going long term cruising there are better things to store in your tiny icebox than six months worth of bacon. Crumble bacon into salads, dice it and add to pasta, sautee with malangas or boniatos for cuban style home fries. Oh, the possibilities are endless.

Here’s a personal favourite that can be made ahead and eaten with one hand, great for passages.

For 2 large wraps:

  • 1 ripe avocado
  • 1 large tomato sliced
  • 8 slices bacon
  • 2 large wraps
  • Dash of hot sauce
  • Squeeze of lime
  • Mayonnaise
Mash half an avocado onto an open wrap. Spread with mayonnaise. Place half of the tomato slices and four slices of bacon on top. Sqeeze the lime, sprinkle with hot sauce.
Roll up.
Devour.
Yummy.
 
Tip: to ripen an avocado, place it in a paper bag with a ripe banana.
