Don't panic, it's not Flipper. The most common fish in the Florida Keys is the Dolphin fish, called this because because of it's big forehead and pointy nose, not because of who it's related to. North of the Keys this is known by the chi-chi name of Mahimahi (called this because some smart marketing dude figured out we wouldn't eat Flipper).
Add the first 10 ingredients, toss well and let sit for an hour. Drink cocktails. Heat a pan to sizzling and add the olive oil. Put in the thickly sliced onion, celery and tomato. Put the fish and the marinade on top and cover quickly. Cook for 4 minutes and flip the fish. Cook for another couple of minutes until the fish is translucent. Serve over rice with salad and plenty of wine. Ummmm.
