2 cups cabbage, thinly sliced
3 large carrots, coarsely grated
1 small onion sliced
2 red or green peppers sliced thinly
1/4 cup good quality olive oil
4 tbsp white vinegar
1 clove garlic
lots of salt and pepper to taste
Toss the vegetables together. Add the oil, then the vinegar and season to taste. Use a lot of salt. Dress the salad just before serving as the vegetables release a lot of moisture.
Nothing humble about this slaw.
